Settle in at the Fairmont Pacific Rim. The hotel has sweeping views of Coal Harbour and Stanley Park and a fantastic outdoor pool. Plus, there’s a great lounge bar serving excellent cocktails. For those with a sweet tooth, one of the city’s most popular gelato spots, Bella Gelateria, is right underneath the hotel.
Grab a coffee and stroll along the seawall. It’s not uncommon to spot bald eagles, raccoons, chipmunks or seals. And you must sample our sushi – it’s fresh from the ocean! Perfect for lunch, try it at waterfront restaurant Miku, which overlooks the city’s iconic Canada Place building. There’s a blossoming craft beer scene, too. There’s a wonderful selection of brunch spots downtown. Café Medina is one of the most popular, and for good reason: delicious Mediterranean-inspired cuisine, Belgian waffles and fantastic coffee. If it’s a sunny day, head outside; you could easily spend half a day on Grouse Mountain. Hop
on the free shuttle bus (from May to September) and take a cable-car ride up the mountainside for breathtaking city and ocean views.
Hire a car and drive up the Sea to Sky Highway, taking in the fjords of Howe Sound. Nearby Whistler is the biggest ski resort in Canada, but it’s also fun in summer. Try the Peak 2 Peak Gondola, installed for the 2010 Winter Olympics, which links Whistler and Blackcomb Mountains together. You get 360-degree views of Whistler Village, mountain peaks, glaciers, lakes and forest.
